Ingredients
  

  • 200 grams daikon
  • 1 teaspoon salt
  • 1 small small onion chopped
  • 1 clove garlic minced
  • 1/2 teaspoon ginger minced
  • 1 small tomato chopped
  • 1 tablespoon cider vinegar
  • 1 small red chili pepper
  • pepper to taste

Instructions
 

  • Cut the daikon into strips. Put in a bowl, sprinkle with salt, combine and set aside for 30 minutes.
  • Mince the garlic and ginger. Chop the tomatoes, onion and chili.
  • After half an hour, squeeze the water out of the radish. Discard the water.
  • In a clean bowl, combine all the ingredients. Toss well and taste.
  • Optional: top with chopped spring onion before serving.

Notes

  • Pickle the daikon for half an hour and squeeze as much water out of it. This will help make the radish become crunchy.
