SIMPLE GOLDEN FRIED RICE

Golden fried rice that uses pantry ingredients which not to mention is easy and quick to make.

What if I told you are missing out if you have not tried golden fried rice?

No, not really but it is time you try making it.

This recipe is easily adaptable to whatever you have in your kitchen cupboard or fridge.

Golden might sound fancy but this is easy and quick to make.

Throw some chopped leftover vegetables in for colour or as we call it jewels.

Make this vegetarian by leaving out the meat-based sausages and either replacing them with tofu or shiitake mushrooms or more vegetables.

If you only have ham or chicken or other protein try those as well.

But if using chicken or pork or beef marinate them before stir frying.

No one would like to bite into a bland piece of meat.

Not exciting!

A bowl of this fried rice make an appearance on our dining table often.

My daughter asks for it when I forget to make one. But only if she knew that we had rice in the box.

Ingredients

Oil – Use neutral oil it does not affect the flavour. And use enough so that the rice does not stick to the pan. I sometimes find that my wok is not well seasoned and the rice sticks to the pan. Not a big problem but when each grain is coated with oil life is easier.

Cooked rice – For this recipe I used Jasmine rice but other varieties of rice work just as well.

Egg yolks – Coat the rice with the egg yolks to achieve that golden/yellow colour.

Chinese sausage – We have used other kinds of sausages and they are great too! It just happened that Chinese sausages is what we had on hand for this recipe.

Vegetable mix – Any vegetables like peas, carrots, broccoli, celery even. If using fresh vegetables I blanch them before I start preparing the rice so they will be ready to be thrown in with the rice before turning the heat off.

Salt and pepper – A dash of salt and pepper is enough for us but feel free to add soy sauce just check the saltiness.

Spring onion – Add chopped spring onion in the last stage of cooking and let the residual heat to wilt it. That would take 30 seconds. And as I was serving this with garlicky carrots from our leftover chicken adobo I left the garlic out.

How to make golden fried rice?

  1. Separate the egg yolk from whites.
  2. Add the yolks to the rice and mix to coat each grain with yolks.
  3. Heat a large frying pan with two tablespoons of oil. Add in the sausages and fry until cooked. Transfer to a bowl and set aside for the time being.
  4. In the same pan, add the rice and cook for 2-3 minutes. Let the rice toast or crisp for a minute before turning.
  5. Push the rice to one side and add the vegetables. Heat the vegetables for a minute.
  6. Combine the rice and vegetables. Add the cooked sausages, season with salt and pepper and finally throw in the spring onion. Mix one last time. Let the residual heat wilt the spring onion.
  7. Turn the heat off and serve.

How to make golden fried rice

Take a cold bowl of rice, coat it with egg yolks, stir fry it with any ingredients you like and what you have on hand. Season it and you will come up with a fancy fried rice.

Ingredients

  • 2 cups cooked, cold rice

  • 4 small egg yolks

  • 2 tablespoons oil

  • 25 grams Chinese sausage

  • 1/3 cup mixed, cooked vegetables

  • dash of pepper

  • pinch of salt

  • 1 tablespoon spring onion

Directions

  • Separate the egg yolk from whites.
  • Add the yolks to the rice and mix to coat each grain with yolks.
  • Heat a large frying pan with two tablespoons of oil. Add in the sausages and fry until cooked. Transfer to a bowl and set aside for the time being.

  1. This recipe is easily adaptable. I followed the steps, beginner me, used ham because no sausages and it was yum! A squeeze of lemon to balance the grease is a nice.

  2. I am not sure if it will taste better with Chinese sausage but we do not eat meat and so I made it without and it was good. I will definitely make it again.

    • As I said on the post, we use up leftovers in the fridge and if normal sausages are available that goes in and the recipe is forgiving. It depends on your taste really and we do not always add meat to ours which is equally good as with meat.

  4. Akala ko turmeric ang pang kulay kaya naging golden ying egg yolk pala.

    • Pwede din pong turmeric and pang-kulay. Gagawa ako sa susunod pero in the mean time egg yolk po muna. Maraming salamat po.
