What is soy sauce vinegar dipping sauce?

Soy sauce vinegar dipping sauce is a mixture of soy sauce and vinegar used to add flavor to dishes. Dipping sauce or sawsawan is a staple condiment that Filipinos cannot live without. This recipe is an easy one to put together for anyone with little time. As the title suggests it mainly consists of two elements – soy sauce and vinegar. And with a few optional ingredients added like vinegar, ground pepper and chilli.

This dipping sauce enhances the flavor of any dish like salt and pepper. It works well when something is missing as one eats fried fish or grilled pork belly and even fried rice. Soy sauce and vinegar is a vegetarian and vegan friendly dipping sauce that uses fish sauce or fermented fish in parts of the Philippines.

Use this sauce basically for everything and the flavor of the dish will be transformed. It is versatile as it can be a dipping sauce or marinade for grilled, fried and steamed meat, seafood and vegetables.

Ingredients

Here are the ingredients to get you started with your ultimate dipping sauce.

  1. Soy sauce – any soy sauce that is available on hand but if you want to try an authentic Filipino dipping sauce try Filipino soy sauce, check for saltiness as you go along
  2. Vinegar – cane vinegar is recommended but other kinds of vinegar like cider, white wine or rice vinegar are totally fine
  3. Garlic – peeled and sliced or crushed with the skin on, this is optional but if you are feeling fancy
  4. Onion – sliced or chopped, use shallots, brown or yellow onion
  5. Pepper – both whole and ground pepper or any to add heat
  6. Chilli – Thai chillies were used for this recipe but any chilli will work and add as much or as little as you want or none at all

Combine all ingredients in a jar, give it a shake and done. 

Use straight away or let it sit for around 10 minutes for the aromatics to infuse before serving if using any.

Common ways to use soy sauce vinegar dipping sauce

This sauce is served as a dipping sauce, a condiment or a marinade. An all-around sauce to keep in the fridge for when you want something to make things better.

1. Fried rice – Take your Filipino garlic fried rice to another level by drizzling this dipping sauce over it. 

2. Fried eggs, meat, fish, and vegetables – Season fried protein and vegetables like the tortang talong.

3. Stir fries – Filipino stir-fries are not particularly strong tasting or mild then sauces are added to amp up the flavors.

4. Plain rice – Soy sauce-vinegar dipping sauce is used to season plain rice.

5. Marinade and salad dressing – Use as to marinate protein or as salad dressing like for this grilled eggplant salad recipe.

Storage

Soy sauce vinegar dipping sauce will keep indefinitely in the fridge in an airtight container. However, if fresh aromatics such as garlic and onion are added they will deteriorate in appearance. But because this sauce is flavorful it will be gone before you know it so no one needs to worry.

Ingredients
  

  • 1/2 c soy sauce
  • 1/2 c vinegar
  • 1 tsp garlic minced
  • 1 tsp onion minced
  • pinch pepper ground
  • 1 chilli

Instructions
 

  • In a clean jar or bowl, pour the soy sauce and vinegar.
  • Add the aromatics and spices.
  • If using a jar, put the lid on and shake to combine the ingredients. If using a bowl, stir vigorously.
  • Use straight away or let sit for 10 minutes before use to let the aromatics infuse.
