CHICKEN IN CREAM SAUCE

Indulge in this comforting, quick and tasty chicken and vegetables in cream sauce ready in 20 minutes.

I saw Jacques Pepin make this dish on KQED.

He is quite relaxing to watch.

He makes cooking a breeze and inviting.

As he said this is not a leftover dish as it has a negative connotation.

Back to the cooking.

Easy chicken in cream sauce recipe

As I cannot follow recipes to the T all the time, i use whatever is available.

For the chicken, I used chicken thigh.

White parts of spring onions were chopped in place of onion.

Now for the sauce, I use flour instead of cornflour to mix with some water to make a slurry.

This recipe is easy and you will be eating in under 30 minutes.

Serve with rice or potatoes or sourdough bread or something else that you might like to go with this delicious creamy chicken dish.

You will already have the ingredients in the fridge and the cupboards.

I put together roast chicken, vegetables and curry roux and have a curry.

Or throw rotisserie chicken in rice and vegetable stir fries even soups to make something different out of the cooked meat.

You don’t want the same thing all the time, do you?

Chicken in cream sauce is an idea that brought a change on the list of food to cook in our family.

If cream is not your thing or cannot have dairy omit the cream and just have the thickened sauce.

It is also delicious.

  • water
  • carrot
  • peas
  • spring onion
  • water and flour
  • roast chicken (leftover)
  • creme fraiche
  • salt and pepper
  • parsley

How can I thicken creamy sauce without flour?

Use cornflour or cornstarch in place of flour.

Can I substitute creme fraiche for double cream?

Yes, substitute creme fraiche with double cream or the other way around to a one-to-one substitution but the flavor would be different. A slightly creamy flavor and thicker dish would be achieved.

How to make chicken and vegetables in cream sauce

Basically, boil the vegetables in water and when they are tender add the chicken.

Pour the slurry slowly then mix.

Add the cream.

Season to your taste.

Et voila! Your chicken in cream sauce is done.

You are ready to serve a flavorful dish and then say Itadakimasu!

Ingredients
  

  • 3/4 cup water
  • 50 grams carrots diced
  • 50 grams peas
  • 1 spring onion white part
  • 1 tbsp flour
  • 1 tbsp water
  • 100 grams roast chicken torn to desired pieces
  • 3 tbsp creme fraiche substitute with double cream or sour cream
  • pinch salt
  • dash pepper
  • parsley chopped (optional)

Instructions
 

  • Boil diced carrots in a cup of water.
  • Add the peas and onion.
  • Slowly pour the water and flour slurry.
  • Add the chicken.
  • Add the creme fraiche.
  • Season with salt and pepper.
  • Transfer to a plate and sprinkle chopped parsley. Serve.
